By improving longissimus dorsi muscle and crude fat content of growing cattle, the beef quality can be improved mainly by increasing redness, decreasing yellowness, cooking loss and shear force, and improving marbling score.
Finally, adding betaine can improve lean meat percentage and muscle fat content of fattening cattle, reduce fat percentage and backfat thickness, and improve carcass quality. The reason for the improvement of intramuscular fatty acid level by betaine may be that betaine promotes fatty acid uptake more than oxidation.
